That said, I’m torn: what happens when Apple releases a software update that effectively blocks the use of said software? Do I get a refund? Probably not.

Most likely, I’ll have to wait until the iPhone Dev Team jailbreaks the latest software update, then wait for the developer of my paid software to create an update that works on the newly jailbroken phone…then hope that Apple doesn’t negate it all over again.
